Bu hasara bu\u011fday, arpa, \u00e7avdar, yulaf gibi tah\u0131llar\u0131n i\u00e7erisinde bulunan gluten isimli bir protein neden olmaktad\u0131r.<\/p>\n\n\n\n<p>\u00c7\u00f6lyak hastal\u0131\u011f\u0131 genetik bir hastal\u0131kt\u0131r. Ailevi kal\u0131t\u0131m s\u00f6z konusudur. Hastal\u0131k ya\u015fam\u0131n\u0131n her hangi bir b\u00f6l\u00fcm\u00fcnde ortaya \u00e7\u0131kabilmektedir. \u00c7\u00f6lyak hastal\u0131\u011f\u0131n\u0131n literat\u00fcrde; \u00e7ocukluk, ergenlik, orta ya\u015f ve ya\u015fl\u0131l\u0131kta ortaya \u00e7\u0131kt\u0131\u011f\u0131 g\u00f6r\u00fclm\u00fc\u015ft\u00fcr.<\/p>\n\n\n\n<p>\u00c7\u00f6lyak hastal\u0131\u011f\u0131, v\u00fccutta immunolojik cevab\u0131 tetikleyen \u00e7evresel (gluten t\u00fcketimi) ve genetik fakt\u00f6rlerin birlikte rol oynamas\u0131 sonucunda ortaya \u00e7\u0131kar. \u00c7\u00f6lyak hastal\u0131\u011f\u0131n olu\u015fmas\u0131 i\u00e7in hem genetik yatk\u0131nl\u0131k hem de \u00e7evresel fakt\u00f6r olan glutenli g\u0131dalar t\u00fcketmekle kendini g\u00f6sterir.<\/p>\n\n\n\n<p>Hastal\u0131k baz\u0131 bireylerde y\u0131llarca hi\u00e7 belirti vermez veya \u00e7ok hafif seyredebilir ve ki\u015fi \u00e7\u00f6lyakl\u0131 bir hasta oldu\u011funu uzun s\u00fcre fark etmeyebilir. Mutlaka gluten i\u00e7ermeyen g\u0131dalar t\u00fcketmeliler.<\/p>\n\n\n\n<p>Do\u011fal glutensizlerin d\u0131\u015f\u0131nda glutensiz olarak tan\u0131mlanan bir g\u0131da tam anlam\u0131 ile glutensiz de\u011fildir. Di\u011fer bir deyi\u015fle s\u0131f\u0131r glutenli bir ya\u015fam olanaks\u0131zd\u0131r. WHO (World Health Organization-D\u00fcnya Sa\u011fl\u0131k \u00d6rg\u00fct\u00fc) ve FAO (Food and Agriculture Organization- Amerikan G\u0131da ve Tar\u0131m \u00d6rg\u00fct\u00fc) 1998\u2019de kilogram\u0131nda 200 mg dan daha az gluten i\u00e7eren g\u0131dalar\u0131 glutensiz g\u0131da olarak ilan etmi\u015ftir. Ancak 2007 y\u0131l\u0131nda bu s\u0131n\u0131r 20 miligrama \u00e7ekildi. G\u00fcn\u00fcm\u00fczde de kilogram\u0131nda 20 mg\u2019dan daha fazla gluten i\u00e7ermeyen g\u0131dalar glutensiz g\u0131da olarak kabul edilmektedir. \u00dclkemizdeki glutensiz \u00fcr\u00fcn tebli\u011f uygulamalarda da 2007 y\u0131l\u0131nda kabul edilen de\u011fer kullan\u0131lmaktad\u0131r.<\/p>\n\n\n\n<p>\u00c7\u00f6lyak hastalar\u0131 i\u00e7in g\u00fcvenli yiyecekler:<\/p>\n\n\n\n<p>T\u00fcm sebzeler,<\/p>\n\n\n\n<p>T\u00fcm meyveler,<\/p>\n\n\n\n<p>T\u00fcm bakliyatlar,<\/p>\n\n\n\n<p>T\u00fcm katk\u0131s\u0131z kat\u0131 ve s\u0131v\u0131 ya\u011flar,<\/p>\n\n\n\n<p>Yumurta, bal, re\u00e7el, basit toz \u015feker, zeytin,<\/p>\n\n\n\n<p>Et, bal\u0131k, tavuk, (Bu \u00fcr\u00fcnler katk\u0131l\u0131 olmad\u0131klar\u0131 gibi daha \u00f6nce unla k\u0131zart\u0131lm\u0131\u015f bir ya\u011fda k\u0131zart\u0131l\u0131p i\u015fleme tabi tutulmamal\u0131d\u0131r.)<\/p>\n\n\n\n<p>Una bat\u0131r\u0131lmam\u0131\u015f konserve \u00e7e\u015fitleri,<\/p>\n\n\n\n<p>M\u0131s\u0131r, pirin\u00e7, patatesin hem kendileri hem de unlar\u0131 besin haz\u0131rlamada kullan\u0131labilir. Ayr\u0131ca kestane unu, nohut unu, soya unu, \u00fcz\u00fcm \u00e7ekirde\u011fi unu da kullan\u0131labilir.<\/p>\n\n\n\n<p>Evde \u00e7ekilmi\u015f g\u00fcvenli baharatlar.<\/p>\n\n\n\n<p>\u00c7\u00f6lyak hastal\u0131\u011f\u0131nda diyet tedavisinde t\u00fcketilmemesi gereken besinler:<\/p>\n\n\n\n<p>Bu\u011fday, arpa, \u00e7avdar ve yulaf katk\u0131l\u0131 her t\u00fcrl\u00fc \u00fcr\u00fcn. (un, bulgur, bulgur pilav\u0131, irmik, makarna, \u015fehriye, kuskus, ekmek, kek, pasta, kurabiye, bisk\u00fcvi, b\u00f6rek, \u00e7\u00f6rek, gofret, simit, kraker, dondurma k\u00fclah\u0131, unlu tatl\u0131lar, gluten i\u00e7eren haz\u0131r sal\u00e7a, ket\u00e7ap, un ilave edilen \u00e7orbalar, soslar, tarhana, yarma gibi).<\/p>\n\n\n\n<p>Galeta ununa, una bat\u0131r\u0131larak k\u0131zart\u0131lm\u0131\u015f tavuk bal\u0131k gibi et \u00fcr\u00fcnleri.<\/p>\n\n\n\n<p>Malt kullan\u0131lan i\u00e7ecekler, bira votka cin v.b.<\/p>\n\n\n\n<p>Guten i\u00e7eren haz\u0131r \u00e7orbalar, k\u00f6fte, pane har\u00e7lar\u0131 gibi haz\u0131r \u00e7e\u015fniler.<\/p>\n\n\n\n<p>Sirke, \u00e7ikolata, puding, sak\u0131z, ket\u00e7ap, mayonez, dondurma gibi g\u0131dalar\u0131n baz\u0131lar\u0131nda gluten bulunabilmektedir. Bunlar yenilmeden \u00f6nce muhakkak \u00fcr\u00fcn hakk\u0131nda bilgi edinilmelidir.<\/p>\n\n\n\n<p>Tuzlu, soslu kuruyemi\u015fler, glutenle yap\u0131\u015ft\u0131r\u0131ld\u0131\u011f\u0131 i\u00e7in yasakt\u0131r. Ancak bunlar\u0131n glutenle i\u015flem g\u00f6rmemi\u015f hali, gluten i\u00e7ermeyen kuruyemi\u015fler serbesttir.<\/p>\n\n\n\n<p>Glutensiz diyette ayr\u0131ca nelere dikkat edilir?<\/p>\n\n\n\n<p>Do\u011fal g\u0131dalara \u00f6nem verilmeli. (s\u00fct-et-bal\u0131k-yumurta-sebze-kurubaklagil-pirin\u00e7-m\u0131s\u0131r-patates)<\/p>\n\n\n\n<p>Okul ve d\u0131\u015far\u0131da yemek yerken dikkatli se\u00e7imler yap\u0131lmal\u0131.<\/p>\n\n\n\n<p>Bu\u011fday unu kar\u0131\u015f\u0131k m\u0131s\u0131r unu, pirin\u00e7 ununa dikkat edilmeli.<\/p>\n\n\n\n<p>Etiketsiz g\u0131da t\u00fcketiminde \u00e7ok dikkatli olunmal\u0131.<\/p>\n\n\n\n<p>\u0130la\u00e7lar, kozmetik \u00fcr\u00fcnleri, \u015fampuan, kremler vb. gluten i\u00e7erikleri y\u00f6n\u00fcnden dikkatli kullan\u0131lmal\u0131.<\/p>\n\n\n\n<p>Pi\u015firme ve haz\u0131rl\u0131k a\u015famas\u0131nda g\u00fcvenli g\u0131dalar\u0131n glutenli g\u0131dalarla bula\u015f olmamas\u0131na dikkat edilmeli.<\/p>\n\n\n\n<p>Tedavi i\u00e7in Ba\u015fvurulacak Merkezler:<\/p>\n\n\n\n<p>&#8211;&nbsp; \u00dcniversite Hastaneleri Endokrinoloji, Gastroentroloji ve Metabolizma anabilim dallar\u0131<\/p>\n\n\n\n<p>Bakanl\u0131\u011f\u0131m\u0131z Sa\u011fl\u0131k Bilgi Sistemlerinden elde edilen verilere g\u00f6re T\u00fcrkiye&#8217;de tan\u0131 konan \u00e7\u00f6lyak hastal\u0131\u011f\u0131 say\u0131lar\u0131 2022 y\u0131l\u0131 sonu itibari ile 154.027 olarak belirtilmi\u015ftir.
